October is here, and I find myself wanting to indulge in anything featuring pumpkin!
This recipe is a hit, even with my kids who typically shy away from pumpkin flavors—they can’t resist it!
It’s a breeze to make, so let’s dive right in!
Ingredients
1 1/2 cups Sugar
1/2 cup Vegetable Oil
2 Eggs
2 cups Flour
1 tsp Baking Soda
1/2 tsp Salt
1 1/2 tsp Pumpkin Pie Spice
1/2 cup Water
1 cup Pumpkin Puree
1 cup Chocolate Chips
Instructions
Preheat your oven to 350°F.
Prepare a loaf pan by greasing it and set aside.
In a bowl, combine flour, baking soda, salt, and pumpkin pie spice, mixing them well. Set this mixture aside.
In another bowl, beat together sugar, oil, and eggs until combined.
Gradually mix in the dry ingredients to the egg mixture while beating. Add the water gradually and continue mixing.
Incorporate the pumpkin puree and ensure it’s thoroughly blended.
Fold in the chocolate chips and ensure everything is well combined.
Pour the batter into the prepared loaf pan.
Bake for about 55 minutes, or until a toothpick inserted into the center comes out clean.
Allow it to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
