Mint Chocolate Chip Fudge

With St. Patrick’s Day fast approaching (though Valentine’s Day hasn’t arrived yet), those who like to plan ahead might find themselves browsing Google and gathering ideas on Pinterest.

While green is the iconic color for this celebration, plain green fudge can be rather unexciting. By incorporating a hint of mint, it transforms into something delightful!

This treat is perfect for any occasion throughout the year.

INGREDIENTS
18 oz White Chocolate Chips
1 tbsp Shortening
14 oz Sweetened Condensed Milk
1 tsp Mint Extract
1 cup Miniature Chocolate Chips

Ingredients

DIRECTIONS
Begin by lining an 8×8 pan with foil, then spray it with non-stick spray.
Melt the white chocolate chips and shortening in the microwave, heating for 45 seconds, stirring, and repeating until smooth.
Incorporate the sweetened condensed milk and mint extract into the melted mixture, stirring thoroughly.
Add food coloring to achieve your desired hue.
Let the mixture cool slightly before folding in the mini chocolate chips to prevent melting.
Set aside about 1/4 of the mini chips for garnish, then mix the rest into the batter.
Spread the mixture into the prepared pan and press down firmly.
Top with the reserved chocolate chips and refrigerate for at least an hour before cutting into pieces.
