Bacon-Infused Garlic Parmesan Potatoes

Nothing beats a delectable potato dish, especially paired with a succulent steak during summer. As the grilling season approaches, I felt compelled to share this delightful side dish for your barbecue.

RECIPE INGREDIENTS

3 lbs Yukon Gold Potatoes
12 oz Bacon
2 tbsp Butter
2 tbsp Garlic, minced
1/4 cup Parmesan Cheese
1/4 cup Fresh Parsley, chopped
1/4 cup Green Onions, sliced
Salt and Pepper, to taste

Begin by halving the potatoes lengthwise and boiling them in water for 12 minutes.
Once boiled, drain and set the potatoes aside.
Chop the bacon into 1-inch pieces and fry until cooked through, avoiding crispiness. Drain and keep the bacon grease for later.

Next, preheat your oven to 400°F.
In a large skillet, combine 2 tablespoons of the reserved bacon grease with butter and warm over medium heat.
Incorporate the minced garlic, parsley, salt, and pepper, stirring well.
Toss in the potatoes to ensure they are well-coated in the mixture.

Move the potatoes to a baking sheet with the cut side facing down.
Top the potatoes with the cooked bacon.
Bake for 30 minutes or until the cut sides start to brown.
Flip the potatoes over and bake for an additional 15 minutes.
Finish by garnishing with sliced green onions.

  2. Drain the potatoes and set them aside.
  3. Cut the bacon into 1-inch pieces and cook until done but not crispy. Drain and keep the grease.
  4. Preheat your oven to 400°F.
  5. In a large skillet, melt the reserved bacon grease and butter over medium heat.
  6. Stir in the garlic, parsley, salt, and pepper.
  7. Add the potatoes and stir until evenly coated.
  8. Place the potatoes cut side down on a baking sheet.
  9. Top the potatoes with the bacon pieces.
  10. Bake for 30 minutes or until the cut side is browned.
  11. Then flip the potatoes and bake for another 15 minutes.
  12. Finally, garnish the dish with sliced green onions.
