Easter Bunny Butt Cookies

With Easter approaching, my children are eagerly asking for festive treats.
These delightful sugar cookies are creatively arranged to mimic the backside of the Easter Bunny!
Ingredients:
- 1-1/3 cups plus 1 tablespoon all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 1/2 egg
- 1/2 teaspoon vanilla extract

Instructions:
- Preheat your oven to 375 degrees F (190 degrees C). In a small bowl, combine the flour, baking soda, and baking powder. Set aside.
- In a larger bowl, cream the butter and sugar together until smooth. Add the egg and vanilla, and then gradually mix in the dry ingredients. Form rounded teaspoons of dough into balls and place them on ungreased baking sheets.

- For the bunny feet, cut one full-sized cookie into four equal pieces. Shape each piece into a rounded circle before baking.
- Place in the preheated oven and bake for 8 to 10 minutes or until golden brown. Allow the cookies to cool on the baking sheet for two minutes before transferring them to wire racks.

- In a medium microwave-safe bowl, combine frosting with 1 to 3 drops of pink food coloring until blended. Microwave uncovered on High for 10 to 15 seconds or until just soft, not translucent.

- To assemble the bunny butt, spread frosting on one whole cookie slice and two of the bunny feet. Attach the bunny feet to the bottom of the cookie, then place a marshmallow in the center of each cookie to represent the tail. Decorate the paws with candy sprinkles or additional frosting. Repeat the process with the remaining cookie slices and feet.

- Bake for 8 to 10 minutes or until browned. Allow cookies to cool for two minutes on the sheet before transferring them to cooling racks.
- In a microwaveable bowl, mix frosting and pink food coloring until fully blended; heat on High for 10 to 15 seconds until it’s soft but not clear.
- Assemble the bunny butt by frosting one whole cookie and two feet, placing the feet on the cookie’s bottom. Add a marshmallow tail in the center and decorate with sprinkles or frosting. Continue with the remaining cookies.
